Play Date Pasta Salad

Yesterday we hosted our first play date at our house and a good time was had by both parents and babies. I kept things simple with some tasty apps from Trader Joe’s and assortment of cold cuts and good crusty rolls from Morano’s. Tiffany brought quiches and pies from our local farmers market, and our friend Marisa made this delightful shrimp pasta salad, a perfect complement to this early spring weather we’re enjoying. Not only was the salad tasty, but very pretty, so I photographed it and asked her to send me the recipe, which she happily did last night. Marisa is far and away my most stylish friend, but she’s also a pretty accomplished cook. I am always impressed with whatever she brings to our get togethers and this shrimp salad was no exception. The basic recipe is from Epicurious, but Marisa modified it a bit, adding lemon juice and celery and omitting the olives. Thankfully there were leftovers, which Johnny and I snacked on last night. And which I will be having for lunch today!

Play Date Pasta Salad (adapted from Epicurious.com)

8 ounces cooked shrimp, cut into pieces

1/2 pound corkscrew pasta (it’s actually called cavatappi)

1/2 cup chopped seeded peeled cucumber

1/2 cup chopped seeded tomato

1/4 cup chopped celery

1/4 cup chopped red onion

1/4 cup chopped fresh dill or 1 tablespoon dried dillweed

2/3 cup regular or reduced-calories mayonnaise

1 tablespoon white wine vinegar

1 tablespoon lemon juice (or more to taste)

Combine shrimp, pasta, cucumber, tomato, celery, onion and dill in medium bowl. Whisk mayonnaise, lemon juice and vinegar to blend in small bowl. Add dressing to salad and toss to coat. Season to taste with salt and pepper. Cover and refrigerate at least 1 hour and up to 2 hours.

That pasta salad looks yummy! I will definitely try to make it.
