Arsenic in chicken. Pink slime in beef. Recent news on the state of the food we eat has made me contemplate becoming a vegetarian. (But then I remember how much I enjoy the occasional cheeseburger). So instead of cutting meat entirely out of our diet, I’ve been looking for ways to ensure that the meat we do eat is of the highest quality. I was already buying organic chicken and grass fed beef when we decided to take things a step further and get our meat directly from local farms. Last winter, we purchased 80 pounds of grass fed organic beef—in a variety of cuts— from Kezialain Farm in Westtown, NY. And a couple of weeks ago, 300 pounds of pork arrived from Horstmann Hills Farm, located near Ithaca, NY. (Thank goodness we made the decision to invest in a chest freezer!) Not only is the product delicious and cost effective, but I like knowing that the animals we are eating lived as humane and gentle a life as possible and were fed a healthy diet.
Needless to say, we’ve been noshing on a lot of pork lately, and when this week’s Fall Fest challenge called for using lettuce in a recipe, BLT sandwiches came to mind. I picked up some late season tomatoes from our local farm stand, fried up some bacon, added some organic red leaf lettuce, a healthy slather of mayo and lunch was served!
Bacon, Lettuce and Tomato Sandwiches
2 slices whole wheat or multi-grain bread
3 slices of bacon
Red leaf lettuce
3 slices of Beefsteak tomato
Mayonnaise
Fry the bacon to desired crispness. Meanwhile, toast the bread. Assemble sandwich and enjoy!
