Mint Peach Popsicles

Some foods just scream summer and popsicles are definitely one of them. I love to make my own whenever I have the chance because it’s really easy and a tasty way to get some extra seasonal fruit into your diet. (Homemade popsicles are also a great snack for the kiddies.) You don’t need any fancy equipment either. I used little plastic shot glasses as molds and they turned out great.

My local farmers market was brimming with fresh peaches this past weekend, and I happily indulged, I’ve been growing mint this summer (and I haven’t killed it yet!) which is a perfect complement to the sweetness of the fruit.  A little lime juice and a touch of sugar made for one seriously flavorful frozen treat. I didn’t peel my peaches, because it’s a pain and I didn’t mind bits of skin in my puree. As I said, I used two ounce plastic glasses for my molds and they were the perfect size for little hands or as an appetizer at a summer party. (If your guests are adults, add a splash or two of vodka before freezing!)

Peach Mint Popsicles (adapted from Whole Foods Market)

2 cups pureed peaches (from 4 medium to largish peaches)

1/4 cup mint leaves

1/4 cup water

2 tablespoons sugar

Juice of one lime

Puree the peaches and mint in a food processor or blender. Combine the water and sugar in a saucepan and heat until the sugar dissolves. Add the sugar water and lime to the peach mint puree. Divide the mixture evenly among popsicle molds or small cups. Add popsicle sticks and freeze for 4 hours. Gently remove the popsicles from the mold (running them under hot water helps.) Enjoy!

My kids have been making popsicles this summer, but they haven’t tried peach yet. Love the combination of peach + mint in your pops!

I keep saying that I need to make popsicles this summer and have yet to do so. Thanks for the peachy inspiration. I like the addition of mint to your recipe.
